SUMAC

This spice is made from crushed premium berries of the wild sumac flowers in the North of Jordan. It is a tangy spice with an acidic sour taste reminiscent of lemon juice. It is wildly used in the Levantine cuisine to colour food, thyme blends and dressings and is perfect in grilled meat, fish and chicken.  Sumac is packed with vitamin C and many antioxidants and helps lower blood sugar.

Our ground cumin is sourced from black cumin seeds, a variety that’s much darker than the olive-green seeds commonly sold. They have a sweeter smell and hints of caraway. Less bitter with a milder pungency, these seeds offer the same buttery and earthy richness one wants typically from a cumin seed. WHOLE CARDAMOM

Cardamom is native to India where it adds its enticing flavour to spice blends, curries, rice pilafs and chai. Across the globe in Scandinavia, cardamom is used as a baking spice in cakes, cookies and buns. Add the pods to stews, pickling and mulling spices, custards for rice pudding and ice cream, and syrups for beverages. The pod’s outer hull should be removed after cooking.

BLACK SEED

Black seed is a plant. People have used the seed to make medicine for over 2,000 years. It was even discovered in the tomb of King Tut. Today, black seed is most commonly used for asthma, diabetes, hypertension, weight loss, and other conditions, but there is no good scientific evidence to support most of these uses. When eaten, the seeds have a bitter flavour that's often compared to cumin or oregano. Black seed is used in salads, and some Arabic sweets.

GROUND ALLSPICE

While its name suggests a blend of spices, allspice is the cured, unripe berry of a tropical evergreen tree found in the Caribbean, Central and South America. Allspice berries are harvested when green (unripe) and briefly fermented, then sun dried (or machine dried), during which they turn a reddish-brown.

ANISE STAR

It's aptly named for the star-shaped pods from which the spice seeds are harvested and has a flavour that is reminiscent of liquorice. Because of similarity in their flavour and names, star anise is often confused with anise, though the two spices are unrelated.
